Is there one place where I can a) check what the current version of a product is, and b) read what things have been changed/fixed in past releases?

You can always download the latest plugins here:
www.fabfilter.com/download
The download page also shows the latest version numbers.
If you download a plugin, its Readme.txt file lists the changes in all versions. We also put this in our news items, e.g. this are the changes for the latest updates:
