I'm interested in potentially purchasing Saturn 2 for myself, but I'm already affiliated with an education account for other Fabfilter products. Would I be able to authorize Saturn to a second account and keep access to the other products on the same machine?

Sure that's no problem. You will just get a license key for your Saturn 2 plug-in that you can use to authorize your computer.
