I think a spectral view that used colors (yellows, oranges, reds etc...) to represent amplitude for the spectrum analyzer would be amazing. Maybe as a second option?

Yes. I really like the way it is implemented in FL Studios Parametric Equalizer 2. I think it would make for a great second display option in Pro-Q.

I use it just like I'd use any other display. I just prefer the method in FL's EQ. To me it feels easier to hone in on problem frequencies.
