With the Mac installer that's not possible, but it is with the PC installer.

On Mac you can simply delete the formats you don't need:

MacintoshHD/Library/Audio/Plug-Ins/Components/
MacintoshHD/Library/Audio/Plug-Ins/VST/
MacintoshHD/Library/Audio/Plug-Ins/VST3/
MacintoshHD/Library/Application Support/Avid/Audio/Plug-Ins/

I second the need to be able to install only the format that I use and don't clutter my system with other formats (CLAP?)

With at least the last two updates of the total bundle it is possible in the Mac version to install just the format(s) you want/need).
